However, in Word 365, the default file location for templates is the more opaque C:\Users\ {username}\AppData\Roaming\Microsoft\Templates.

I entered it into the search box and then clicked on the first result. That opened this folder: "C:\Users\myname\Documents\Custom Office Templates". I copied a Word document there and renamed it "test1.dotx". I opened Word, clicked on File, then New. When the New dialog opened, I clicked on the Personal tab and, voila, the test1 template appeared.

As Doug points out, that old dialog had better functionality than the File > New page that Microsoft introduced in 2007 and has been tinkering with (and in many users' opinion ruining in various ways) ever since.
