2011年8月27日 · Rachiu - The enzymes will keep working at temps below 60C. I can't remember, but I'm thinkin they'll still be working down around 50C. I like to get mine in at around 63-64C then insulate really well and let it rest over night, stirring occasionally in the first couple a hours. Usually after 12 hrs my worts in the 120F range.

With a water bath, in normal atmospheric pressure, practically you can't ever bring the mash to boiling because there is a lot of waste of heat by boiling the water.

2011年4月29日 · @Rachiu, those look nice man, you could use 'em just like that, or char some, and use 1 char and 1 toasted in each container. I think someone mentioned already, but ya, 70% ABV is too high, as I recall it extracts too many tannins. 60-65% is ideal.
